I use rich ganache, smooth Swiss meringue buttercream, and fresh ingredients to create that balance, giving you a lighter, more indulgent experience that does not compromise on the artistic flair. When you choose a non-fondant design, you are prioritising the actual taste of the cake. Without the heavy layer of sugar paste, you get to enjoy the flavour of the sponge and the filling, whether it is Dutch truffle, fresh strawberry, or roasted almond. My approach to these designs is to let the textures speak for themselves. You will see techniques like fault-line effects, where the cake is partially exposed to reveal the filling, or metallic lustre finishes that add a touch of glamour without the fondant. ### Why my non-fondant cakes work: * **Flavour first:** We rely on premium ingredients like high-quality chocolate and fresh fruit, not heavy sugar coverage. * **Modern Aesthetics:** From floral arrangements using sanitized fresh blooms to edible gold leaf accents, these cakes look as good as they taste. * **Customisation:** Just because it is not fondant does not mean it cannot be themed. I work with acrylic toppers, custom chocolate spheres, and even edible wafer paper to bring your ideas to life. Every cake is baked fresh in my Mulund studio. I deliver across the Mumbai Metropolitan Area in AC vehicles to ensure that the delicate toppings, fresh fruits, and structural elements reach your venue in perfect condition. If you have an idea in mind, let's talk about how we can build it without the need for heavy fondant. ## About The Bake Room I’m Bejal, and I bake every cake as a tribute to my dad.
