I use a hearty blend of ragi and oats, sweetened entirely with jaggery, and pack it with generous amounts of dark chocolate chips and walnuts. Since I bake everything in small batches right here in my Airoli kitchen, these cakes are made fresh to order—so do let me know in advance when you need yours. ### Baking with Intention My approach to "guilt-free" isn't about restriction; it's about using better ingredients. When I develop these recipes, I look for ways to keep the texture moist and the flavor rich, even when swapping out traditional white flour or refined sugar. Using ragi and oats gives the cakes a nutty, earthy depth that pairs beautifully with dark chocolate. ### What Makes These Treats Different * **Ragi & Oats Blend:** A fiber-rich alternative to maida that keeps you full and satisfied. * **Sweetened with Jaggery:** I prefer the natural, complex sweetness of jaggery over refined sugar. * **Premium Couverture Chocolate:** Even in my healthier bakes, I don't compromise on chocolate. I use couverture chocolate chips, which melt smoothly and provide a real cocoa flavor. * **Small Batch, Freshly Baked:** I am not a factory. Every tin is baked fresh for your order, ensuring you get it at its peak shelf life. ### Important Details for Your Order * **Ordering:** As a home baker, I operate on a pre-order basis. Please place your orders at least 24 to 48 hours in advance so I can manage the dough proofing and baking time properly. * **Storage:** These cakes are preservative-free. They are best kept in the reusable tin provided and will stay fresh for 2 to 3 days at room temperature, or up to a week if refrigerated. * **Delivery:** I am based in Airoli, Navi Mumbai. All orders are pickup, though you are welcome to send a Dunzo or Porter service to collect your treats if you cannot make it personally. ## About Megha Kharakwal I'm Megha, and I started this journey as a home baker in 2019 to turn my love for baking into something real.
