This makes the cake dense and rich, not light or airy. My biggest tip, especially during the monsoon, is to microwave any of my cakes for 20 seconds before eating. It warms the ingredients, makes the texture melt in your mouth, and brings out the flavor profile. I started this journey four years ago because I could not find desserts that were truly healthy and aligned with my Jain values. My philosophy is simple: the '4 NOs'—no refined flour (maida), no butter, no eggs, and no refined sugar. Instead, I use natural sweeteners like jaggery and dates to ensure my treats are safe for everyone, from children to senior citizens and those watching their blood sugar levels. Every item you see here is made from scratch in my home kitchen in Mumbai. Because I do not use commercial preservatives or stabilizers, my cakes, brownies, and mousse cups have a different, denser texture than what you might find in a store. I take great pride in making them Jain-friendly and suitable even for fasting periods. If you are ordering for an event or just a weekend treat, remember that these are baked fresh. I suggest heating them slightly before serving to fully enjoy the moisture that comes from the fruit pulp and healthy oils I use. Whether you are looking for a sugar-free brownie box or a celebration cake that follows your dietary needs, I am here to make sure you get something pure and honest. ## About The Dolce Baker I turned my passion into a business at 55 because I wanted to show that healthy eating does not have to be boring. My kitchen is small, my team is family, and every dessert I make is a promise that I would happily serve it to my own loved ones.
