You pick your base, choosing between wheat noodles in a rustic clear broth or a rich soy-miso blend, and then add your protein, be it smoked pork slices sourced from Manipur, prawns, or fresh seasonal greens. In the Northeast and across the Himalayas, a bowl of Thukpa is more than a meal. It is a source of warmth and resilience. At Singju, we keep the process honest because that is how it is done back home. Our Thukpa is built on a clear, ginger-garlic broth that feels light but hits deep, paired with flat wheat noodles. If you want something heavier, our Ramen takes a different route. We focus on a rich, creamy soy or miso base that packs a serious umami punch. We do not cut corners on the toppings either. You can expect soft-boiled eggs, sweet corn, and nori strips balanced against your choice of protein. For those who want the most authentic experience, I recommend the smoked pork. We use cured pork slices from Manipur, which are stir-fried to bring out that earthy, fermented depth that defines the region’s flavor profile.
