I actually infuse the sponge layers with aromatic saffron milk and tuck in fresh, authentic Rasmalai pieces, not just an essence. You get the familiar comfort of a traditional dessert in a texture that melts in your mouth. Fusion cakes are where my kitchen truly comes alive. My goal is to capture those distinct Indian flavours—saffron, cardamom, nuts, and condensed milk—and balance them within a light, airy sponge. The biggest challenge with fusion is getting the moisture levels right because traditional Indian sweets are often soaked in syrup, which can make a cake soggy if not balanced. That is why I use a specific crumb structure designed to hold up to the richness without losing the soft texture you expect from a premium bake. For my Almond Rocher or Rasmalai cakes, I rely on pure, high-quality ingredients. No artificial extracts here. Every order is a fresh, custom process. Since I run a small kitchen, I don't keep inventory, which guarantees your cake is baked closer to your event time. If you have a specific Indian dessert you want to see as a cake, let’s talk about it. I have experimented with various pairings and love the challenge of adapting a traditional recipe into a celebration cake. Whether it's for a birthday or a festive gathering, these fusion flavours usually end up being the conversation starter at the table. ## About Shireen's Bake House I quit my corporate career to chase my passion in this small kitchen, named after my dadi Shireen. Everything I bake is eggless and made with a 'more cake, less cream' philosophy. When you choose my bakes, you are getting something crafted with real care, not mass-produced filler.
