I remember the street-side stalls at Calcutta fairs—the smell of frying spices, the hustle, and the way everything tasted better outdoors. But as a kid, I was always told *pet kharap hobe* (it will upset your stomach) by my father. That is exactly why I started making these classics at home. My version of Kolkata-style Chilli Chicken is inspired by the Tangra-style preparation—bold, spicy, and perfect with rotis or noodles. Similarly, my Ghugni is a robust yellow pea curry that I like to dress up with fresh onions, chillies, and coriander, just like the vendors at the Kolkata Book Fair.
