## About Spanish & Mediterranean Fine Dining

### My Story & Food Philosophy

Cooking takes me back to my family's kitchen in Spain. My abuela (grandma) is still the alma de la cocina (soul of the kitchen) for me. Those smells of roasted peppers, fish, saffron, olive oil - they’re what I try to bring to every plate. I put cariño (love) into the food here, because that's how I learned.

### Spanish Favourites

If you want the real taste of Spain, start with the classics. Paella Valenciana is my signature - saffron rice, fresh seafood, cooked for sharing. Tapas sharing plates like Patatas Bravas and Chicken Croquettes come out first, best enjoyed with a drink and good company. The slow-braised lamb is my go-to for something hearty and rustic.

### Mediterranean Highlights

My kitchen doesn’t stay put in Spain. I bring in Mediterranean seafood specialties - charred lobster, prawns, Basque-style cod. There’s handmade pasta too, if you crave a bit of Italy. The wood-fired pizzas and grilled meats are all about simple, bold flavours.

### The Setting

There’s a choice: outdoor cabanas under the stars (super romantic, if you’re into that) or a warm, elegant indoor spot where you can actually hear yourself talk.

### Drinks That Matter

A meal isn’t complete without a glass of Red Wine Sangria or a wine that fits the food. That’s how we do it.

I want you to taste the cariño and the stories behind every dish. If you love what you eat, that’s all that matters to me.

### My story

Hola, Sevilla here. Chef Alex at the helm, cooking up my Spain for you in New Delhi. My abuela’s kitchen was my school, with roasted peppers and saffron in the air, and cariño (love) in every dish. Forty years and I still chase those smells. I cook from the heart, so when you eat here, you get a piece of my home. Come, let’s eat, laugh, and say olé!
