By using premium almond meal instead of standard grain-free blends, I keep the sponge naturally moist and dense, meaning you won't need to worry about the cake crumbling or drying out by the second day. When I set out to create this recipe, I wanted to prove that gluten-free doesn't have to mean dry or tasteless. This cake is simple by design, relying on the natural oils in the almond flour to provide the structure and flavor that you would usually get from wheat. I bake these in small batches right here in my Bangalore kitchen. Because I don't use preservatives or stabilizers, I recommend enjoying the cake within three to four days of delivery. It pairs perfectly with an evening tea or coffee and keeps surprisingly well if you store it in an airtight container.
