Traditional Thandai often relies on dairy milk and heavy sweeteners. I wanted to create a version that captures that classic, spiced cooling sensation without the inflammation or sugar crash. My process is simple: I use a rich coconut milk base, which provides a natural creaminess that holds the spices well, and I blend it with almonds for heartiness. ### The Process Every batch starts with sourcing quality ingredients. I do not use store-bought thickeners or stabilizers. The aroma comes from traditional Thandai spices, balanced perfectly so the drink feels light.
