This isn't the quick-fix variety, as it requires time, proper heat control, and patience to get that signature texture. Making proper Undhiyu is a labor of love that cannot be rushed. In our kitchen, we select over 20 different vegetables including purple yam, sweet potato, and surti papdi to create the authentic slow-cooked casserole you expect. We use traditional techniques, cooking in earthen pots to ensure the spices and vegetable juices meld perfectly. Our methi theplas are made daily with fresh fenugreek leaves and whole wheat flour. Unlike store-bought versions that sit on shelves, ours are rolled thin and cooked until just right, giving them a shelf life that makes them ideal for travel or a quick lunch. We do not use preservatives or hidden additives, focusing entirely on the ingredients you would find in a home pantry. Since we operate out of our home kitchen in Doddagubbi, we maintain strict control over every batch.
