This keeps the volatile oils of the Byadgi chilies and roasted spices intact, ensuring your rice has that deep, authentic flavour every single time. ### Our Process: Temple-Style Authenticity When we talk about traditional rice preparations, we mean the kind that reminds you of temple prasada or a home-cooked feast. Our Puliyogare is crafted using a thick, tamarind-based gojju that we cook slowly with jaggery, groundnuts, and copra. We don't use store-bought packets; our family's recipe for the puliyogare mix, perfected by my father Ranganath Iyengar, relies on high-quality Byadgi chilies for that rich, dark red color and mild, lingering heat. ### Sattvic Preparation (No Onion, Garlic) Every dish we prepare for your function adheres to Sattvic principles. We use pure, compounded Hing and our homemade spice blends to build flavor, completely avoiding onion and garlic. Whether you are hosting a small housewarming or a large wedding of up to 10,000 guests, the taste remains consistent because we supervise the kitchen ourselves. No shortcuts, just the slow, deliberate process of roasting spices to release their natural oils. ### What Goes Into Your Plate: * **Puliyogare:** A tangy, spicy mix coated perfectly on every grain, served with our traditional touch. * **Vangi Bath:** Prepared using fresh, tender brinjals and our signature vangi bath powder, which contains roasted cinnamon and cloves for an aromatic finish.
