It is a chance to taste a work-in-progress, like a new botanical cocktail Atul is currently balancing or Chef Tharun’s latest take on a classic stroganoff. The Plats Playground is not about perfection. It is about the raw excitement of discovery and the quiet choreography of a kitchen in motion. We use these sessions to test how ingredients behave—how a specific milk clarification can change the mouthfeel of a cordial, or how fat-washing a spirit with coconut oil alters the finish of a drink. Located in Malviya Nagar, our space transforms on these days. It becomes a testing ground for ideas gathered from our travels, like that perfect Bánh Mì we found in a small Vietnamese eatery, or the way a simple marigold infusion can change the profile of a gin. We invite you to be part of this process. You might find a cocktail featuring black garlic miso or a dessert that explores the contrast between sweet and savory. This is where we refine our craft. If you are looking for predictable menus, this might not be the day for you.
