This gives that smooth, stable finish you see in these swirls, which holds up perfectly even if your party venue is a bit warm. My signature styles focus on texture and color. Whether it is the intricate rosette work on my lavender cakes or the 'ugly cake' messy piping style, everything is hand-piped with care. Because I avoid non-dairy whip, my frosting has a richer mouthfeel that stays firm and holds its shape. I love playing with palettes like lavender, pastel pinks, and bright rainbow swirls. If you have a specific color theme for your party, just share it with me; I can custom-mix my buttercream shades to match your decor. Regarding flavors, most of these designs pair best with my Belgian Chocolate or Vanilla Bean sponges. Since it is just me in the kitchen, I spend time ensuring every layer is balanced. If you want something minimalist like a bento cake or a larger tiered creation, we can discuss the sizing to ensure you have enough servings for your guests. All my cakes are 100% eggless, meaning you get that dense, moist sponge without any compromise on the quality or taste. ## About On The Baking Tray I’m the one-woman show behind OTBT, hand-whipping every batch in my Andheri kitchen.
