That’s why I use internal food-grade doweling and reinforced structures for all my multi-tier designs, so you don’t have to worry about a thing while the party is in full swing. Every sponge I bake is 100% eggless, ensuring that even your most traditional wedding centerpiece stays moist, soft, and completely inclusive for all your guests. Your wedding or anniversary is a major milestone, and the cake should reflect that without feeling like just another vendor transaction. Whether you are envisioning a classic tiered cake topped with fresh roses or something modern like a floating acrylic separator filled with fairy lights, I work with you to bring that specific vibe to life. ### My Approach to Wedding Cakes I focus on the intersection of style and structure. A three-tier wedding cake needs to hold its own, not just look pretty in photos. I use dense sponge bases that stand up to the weight of stacking, while keeping the flavor profile rich—think Belgian Chocolate, Vanilla Bean, or seasonal fruit pairings like fresh Mango. ### Customization Details - **Design Elements:** From delicate hand-piped stencil work to gold leaf accents and dried botanicals, I tailor the aesthetic to match your wedding decor. - **Personalization:** If you want a specific topper with names or a special date, I can handle the custom acrylics. - **Floating Tiers:** This is one of my favorite structural looks. I use food-grade clear separators that allow us to place flowers or fairy lights inside the cake itself, creating an illuminated effect that looks incredible under banquet hall lighting. I bake everything from my kitchen in Andheri, and I manage all my deliveries across the Mumbai Metropolitan Area personally. Because I am a solo baker, I pour real time into every detail—whether it is ensuring the buttercream finish is flawless or carefully placing every macaron and chocolate accent. Let's chat about what you are imagining for your celebration. ## About On The Baking Tray Hi, I’m the one behind OTBT, and I’m obsessed with making your big day feel just right.
