The truth is that when you are a solo baker, you have total control over the quality. I handle every step from the initial mixing to the final box-up, which means the cake you receive is exactly what I intended to create. Running a small kitchen in Andheri West means that every order is a personal project. When you see those videos of me frosting a cake, that is exactly how it happens in real life. I do not have a massive team or automated lines. It is just me, my trusted tools, and a lot of focus on getting that eggless texture just right. Because I operate this way, I can maintain high standards across everything, whether it is a minimalist bento cake for a small surprise or a multi-tier wedding showstopper with delicate floral work. This also means I can offer flexibility. If you want a specific shade for your frosting or a unique doodle on your bento box, we can actually talk about it during the order process. I believe the best part of ordering a custom cake is the collaboration. My process is built around open communication, so you know exactly what is going into your dessert. Plus, since I focus on eggless recipes, you do not have to compromise on taste or texture for your celebration. If you are planning an event in Mumbai, reach out early. Being a one-person team means I have a limited capacity per day, but it also guarantees that your cake gets the attention it deserves. ## About On The Baking Tray I am the person behind the whisk at OTBT, where eggless baking is the only way I work. Whether it is a tiny bento cake or a wedding showstopper, every order gets my full attention because I believe a cake should feel like a hug.
