If you are cooking a traditional Naga curry, do not use dried or processed alternatives. It will change the taste of the dish. Use the authentic, fermented soybean cakes for the depth your recipe actually needs. Cooking Naga and Manipuri food in Bangalore often feels like a compromise because of missing ingredients. My goal is to make those staples accessible. I focus on bringing the raw, pungent, and traditional components of our cuisine to your kitchen. ### The Pantry Basics * **Axone (Akhuni):** This is the foundation of most Naga curries. I sell it the way we use it at home, fermented and packed in banana leaves to keep the profile strong. * **Bamboo Shoots:** I stock both fresh slices and wet fermented shoots. The fermented version provides the sour kick needed for many of our traditional stews. * **Fish & Pastes:** Authentic Naga and Manipuri recipes rely on umami-heavy additions. My stock includes dried fish, shrimp, and pungent fermented fish pastes. These are essential for balancing the heat in chutneys and curries. ### Handling and Storage These items are strong. If you are new to these ingredients, start with small amounts to understand how they react with heat and other spices. I source these specifically for those who know the authentic flavour profile. Everything I sell is what I keep in my own pantry.
