If you’re preparing traditional chutneys or a side, keep in mind these ghost peppers are extremely hot—handle them with care. This collection brings together the essentials of our pantry. Our fermented soybean cakes (axone) come wrapped in banana leaves, which is how we maintain the moisture and pungent flavour profile. For your curry base, we provide bamboo shoots in both fresh and fermented forms. The dried and smoked river fish, along with our dried shrimp, are crucial for adding that deep umami flavour characteristic of many Naga and Manipuri dishes. You will also find jars of our regional fish and shrimp pastes, which are essential for those authentic, bold flavours. If you are just after a quick meal, we also stock a range of Korean instant ramen, including the 2x spicy Buldak. We manage our inventory locally in Koramangala and Ejipura.
