Our heritage spice mixes are exactly what we use at the hotel, packed with rare spices like dagad phool and mace. Just add your fresh meat and follow the step-by-step guide on the box to get that deep, slow-cooked flavour without the hours of prep. Our story started in 1923 in a small Bhendi Bazaar bhaatiyarkhana, where my great grandfather Abdul Karim began serving Nalli Nihari to workers. Over a century later, we are still serving the same recipes. We realized that our customers wanted to recreate this magic in their own kitchens, so we took our hotel-kitchen spice blends and made them available for everyone. ### Why Our Spice Mixes Are Different We do not use generic off-the-shelf ingredients. Our blends are based on the same 100-year-old family recipes that have defined our hotel. * **Authentic Ingredients:** We use traditional thickeners like roasted gram flour for our Nihari, ensuring that gelatinous, sticky texture that defines the real deal. * **Technique Focused:** Our Shami Kebab mix includes specific natural binding agents so you get that melt-in-mouth texture without the kebab falling apart. * **ISO & HACCP Certified:** While the recipes are ancient, our manufacturing meets modern hygiene standards.
