It is a traditional recipe from Bihar that I have adapted for modern kitchens. It works beautifully not just with Indian snacks like pakoras or parathas, but as a tangy twist on pasta and pizzas. It stays fresh because I make it in small batches with real mustard, not chemicals. ### How We Make Our Chutneys & Jams Everything in my kitchen follows a simple rule: if I wouldn't serve it to my own family, it doesn't go into the jar. When you open a bottle of my Aam ki Mithi Chutney, you are getting raw mangoes, organic jaggery, rock salt, and hing. That is it. No thickeners, no artificial colors, and no preservatives. The dark, rich color comes naturally from the jaggery, not from food dyes. ### Why Small Batches Matter I prefer to keep production small. It allows me to control the quality of every single ingredient, from the ripeness of the fruit to the freshness of the spices.
