We use 100% ragi flour and natural sweeteners to create a dense, fudge-like texture with an optional molten center that feels just as indulgent as a traditional brownie. Many of our customers come to us asking for a dessert that fits into a healthier lifestyle without feeling like diet food. Our approach is simple. We swap out maida for 100% ragi or whole wheat and replace refined sugar with jaggery powder, dates, or honey. It is important to remember that because we do not use any preservatives, these cakes are at their absolute best when eaten within 2 to 3 days. Please store them at room temperature if you plan to finish them quickly, or keep them covered to maintain moisture. Whether it is a fruit and nut loaf or our signature chocolate ragi bundt, every item is assembled fresh in our Noida kitchen before it reaches you. If you have a specific event in mind, please reach out early so we can manage the baking time properly. ## About Niwala by Mallika We started this kitchen at 56 because we believe age should not limit your dreams.
