It is all about the moisture balance in the sponge and using stable whipped cream that holds up in Mumbai humidity. Whether it is fresh mango or a mix of kiwi, pomegranate, and apple, I slice the fruit right before the final assembly so every bite stays crisp and refreshing. There is something about a classic cake that just hits the spot. My fruit cakes are not just about putting slices on top—it is about matching the sponge to the fruit. For my Alphonso mango cake, I use a light vanilla base that lets the natural sweetness of the fruit shine through. When it is not mango season, I switch to fresh kiwi, pomegranate, and apple for a mixed fruit combination that is just as vibrant. My take on the Black Forest is a bit of a labour of love. I handcraft the chocolate lattice cage you see in the photos. It takes a steady hand and some patience, but it adds that satisfying chocolate crunch you do not get with standard cream cakes. All these options are 100% eggless. Because I bake from my own kitchen, I do not keep massive batches sitting in a freezer. I bake your order specifically for your date so it is fresh when it reaches your door. Whether you are planning a family get-together or just want a treat for the weekend, these flavors are my go-to recommendations for anyone who prefers a lighter, less sugary dessert. ## About Nikkys Cakes Hi, I am Nikky.
