Because we source fresh fish and specific seasonal ingredients like bamboo shoots for our curries, we cook on pre-order. This ensures your Sareng thongba or Tharoi thongba arrives at your doorstep with the same flavour profile you would expect back home in Manipur. My kitchen at NCF focuses on the soul of Manipuri cooking. When you order our fish or seafood, you get traditional recipes, not restaurant adaptations. Take our Sareng thongba (Boal fish curry), which we simmer until the spices are perfectly absorbed, or our Nganam, where we wrap fresh fish in turmeric leaves to steam it. We respect the seasonality of our food. That is why you will see items like Tharoi thongba (snail curry) on our menu only when we can source the freshest catch. We treat our seafood with the same care as our festival platters, ensuring clean, natural flavours without artificial additives.
