These feasts are limited-batch productions using heirloom family recipes, like our slow-cooked Kuttanad Duck Olarthu and signature Stuffed Chicken Roast. Because we source fresh ingredients and prepare everything in-house, we only open a few slots for each festival. If you want these authentic flavours on your table, booking early is the only way to ensure you do not miss out. Syrian Christian (Suriani) cuisine is the soul of our holiday menus. It is a marriage of Kerala’s coconut-rich landscape and a long history of bold, global spices. For Christmas and Easter, we step away from everyday meals to recreate the feasts I grew up with. This is not factory food. It is about slow cooking, patience, and family secrets. The star of our table is often the Stuffed Chicken Roast—a whole bird, pan-roasted to perfection with a spicy masala filling. Then there is the Lamb Stew, a creamy, aromatic masterpiece that demands to be mopped up with soft Appams or Idiyappam. It is not just about the protein, it is about the texture—the crunch of a fried cutlet, the velvety payasam, and the fiery kick of a pepper roast. Bringing this feast home is a logistical dance. We ensure every parcel arrives with the warmth and aroma intact. These menus are seasonal and specific to the calendar. Once the slots are filled, we close orders to maintain the quality. Whether you are planning a family brunch or an intimate dinner, these are dishes designed to spark conversation and bring a bit of 'mazaa' to the table. Let us take care of the kitchen so you can focus on the celebration. ## About NairOnFire I am the one behind these recipes, and for me, Christmas and Easter are not just dates on a calendar. They are memories of long family lunches and the specific aroma of spices in the air. I bring that same Suriani heart to your table, cooking dishes that take time and a whole lot of love.
