My almond and chocolate chip cookies are vegan and gluten-free, but they still have that satisfying crunch and deep flavor you expect, so you are not sacrificing taste for health. For a long time, 'healthy' felt like code for 'boring' or 'bland' in the dessert world. I wanted to change that. Whether you are managing gluten sensitivity, opting for a vegan lifestyle, or just trying to cut back on refined sugar, you shouldn't have to settle for something that doesn't feel like a proper treat. My approach here is simple: I use real, clean ingredients. I rely on jaggery for a deeper, more natural sweetness in my wholewheat cakes, and I use high-quality flours for my gluten-free range. Take my dry fruit travel cake, for instance—it is dense, packed with wholesome ingredients, and sturdy enough to handle a trip to Bangalore without crumbling. It is the perfect balance of nutrition and decadence. Everything in this collection is baked in my Vashi kitchen. I do not take shortcuts with pre-mixes or preservatives.
