It requires precise temperature control and structural planning to keep the cake stable, especially with my eggless recipes. When you ask for a design, know that I spend hours ensuring the structure supports your idea so that the cake looks perfect when it arrives at your table in Navi Mumbai. ### Designing Your Custom Cake I treat every custom cake as a project. Whether you want a high-gloss, colorful mirror glaze like you see in my entremet videos, or a specific theme like a fun money-themed cake, the process starts with understanding the event. **The Art of the Finish** - **Mirror Glazes:** This technique creates that signature high-shine look. It is delicate and requires specific setting times, making it best for chilled dessert experiences. - **Fondant & Sculpting:** If you need a specific theme, such as a superhero, a favorite hobby, or a milestone surprise, I use fondant to build those 2D and 3D elements. These cakes are structured for durability so you can display them before cutting. - **The Flavor Match:** I never sacrifice taste for looks. My cakes use Swiss Meringue Buttercream or ganache under the fondant to keep the sponge moist. I offer flavors from classic Belgian Chocolate and Nutella Hazelnut to Desi Fusion favorites like Rasmalai and Cardamom. **Why My Kitchen is Different** Operating out of Vashi, I focus on 100% eggless baking without shortcuts. My recipes are slow-fermented and crafted to handle the Indian weather better than standard mass-produced cakes. If you have a complex design in mind, reach out with your theme and guest count early. I am happy to guide you on which base and finish will best survive the travel or the duration of your party. ## About Moi Doughssier I am Nafisa, and Moi Doughssier is where I pour my passion into every bake.
