I soak the layers in custom syrups and use fresh elements to ensure the balance is just right. Because these cakes use fresh ingredients, they are best enjoyed slightly chilled, so please let me know your pickup time so I can time the final assembly perfectly. Creating a fusion dessert is about more than just swapping ingredients. It is about understanding the profile of traditional Indian sweets and mapping them to the structure of a French-style cake. My signature Rasmalai cake, for instance, is not just a white sponge with cream. It features a cardamom-infused sponge soaked in rich saffron milk, layered with actual Rasmalai chunks and pistachios to give you that authentic bite every time. I focus on balancing the intense sweetness of desi mithai with the airy, lighter texture of Swiss Meringue Buttercream or Chantilly Cream.
