We keep our cafe intentionally small and intimate so you can smell the fermentation process while you decide between a slice of our signature Basque cheesecake or a warm, savory bagel. Our cafe in Vashi started as a dream of bringing honest, slow-fermented baking to our neighborhood. When you step inside, you are not just walking into a shop; you are entering a space where every batch of sourdough is proofed for 24 to 48 hours and every pastry is laminated by hand. We wanted to create a place where the community could slow down. Most visitors start with our eggless Basque cheesecake, which has become something of a local legend. If you are here for a quick brunch, our gourmet sandwiches made on house-baked bagels or Goan Poee are the main draw. We focus on classic French technique but with a desi soul, which is why our flavor profiles often lean into spices and familiar comfort. Whether you are picking up a loaf for the week or sitting down for a specialty coffee and a bomboloni, everything is crafted without preservatives or shortcuts. Our shelves change based on the season and what our local patrons ask for next.
