It is naturally leavened and diabetic-friendly, giving you the gut benefits of traditional sourdough with the dense, nutrient-rich profile of finger millet. Transitioning to a healthier diet often feels like a series of compromises, especially when it comes to bread and sweets. That is why I focus entirely on clean-label baking. My Ragi Sourdough, for instance, uses a wild yeast starter instead of commercial yeast, which makes it much easier to digest. Because I skip the commercial improvers and preservatives, the texture relies entirely on the quality of the grains and the patience of the proofing process. If you are looking for snacks, my vegan and refined sugar-free cookies—like the almond and chocolate chip options—offer a genuine crunch without the processed sugar spike. These are made with plant-based ingredients, making them a great option for those with dairy sensitivities as well.
