Whether you’re grabbing a loaf of our preservative-free country sourdough for your morning toast or treating yourself to our viral Basque cheesecake, it’s all made from scratch in my Vashi kitchen using clean, honest ingredients. ### The Moi Doughssier Philosophy Baking for me is about stories and memories. When I started, I just wanted to provide honest, preservative-free bread to my neighbors in Navi Mumbai. That passion for quality remains the core of everything I pull out of the oven. We don't use industrial shortcuts; we use patience. Our breads go through a slow fermentation process, often lasting 24 to 48 hours, which makes them better for your gut and richer in flavor. ### What You Will Find Here This collection highlights the best of what we do: * **Artisanal Breads:** From classic Country Sourdough to our hearty 100% Wholewheat and gluten-free Ragi options, these loaves have a rustic crust and an airy, moist interior that you just can't get from supermarket bread. * **Eggless Viennoiserie:** My French training taught me that technique is everything. Our croissants and pastries rely on high-fat butter lamination to achieve that perfect honeycomb structure, proving that you don't need eggs to get a decadent result. * **Gourmet Savories:** We like to play with flavors, like our Goan Poee sandwiches stuffed with Madras-style chicken curry. It's a blend of global techniques and local soul that we call our 'French style, desi feels' approach. * **Signature Desserts:** Our Basque cheesecake and filled bomboloni are local favorites. They are dense, creamy, and designed to satisfy cravings without being overly sweet. Everything is baked in small batches in Vashi. Because we focus on fresh ingredients, our menu changes slightly with the season, but the commitment to 'finely crafted decadence' stays the same. ## About Moi Doughssier I'm Nafisa, and I started this journey because I believe bread should be the hero of the meal, not an afterthought.
