I use high-fat butter for precise lamination to ensure every layer is distinct and flaky without relying on eggs, which means you get that signature crunch and soft, airy interior in every bite. When you order, expect a fresh, buttery pastry that holds its own, whether it is a classic pain au chocolat or my savory Pomodoro crust. People often think eggless pastry means compromising on texture. In my Vashi kitchen, I treat it as a technical challenge. True viennoiserie relies on lamination—folding layers of butter into dough repeatedly—and I have spent countless hours perfecting this process using premium high-fat butter to achieve that airy, honeycomb interior usually associated with traditional French baking.
