Because I bake only on order and use real butter instead of margarine or premixes, my sponges have a different density and texture than what you find at commercial bakeries. I keep the flavors honest, so if it is a chocolate cake, you are tasting actual Belgian couverture, not artificial cocoa powder. This is why my sponges require 24 hours notice. They need that time to be prepared fresh, never reheated, ensuring you get the best possible quality. ### Why I avoid shortcuts When you see a 'from scratch' label in a bakery, it should mean exactly that. I do not use pre-mixes, and I stay away from artificial stabilizers that keep cakes 'fresh' for weeks on a store shelf. Baking is chemistry, and when you remove the chemical agents, you have to be much more precise with your temperatures and ratios. ### The ingredient difference My kitchen runs on a few core rules. I swap refined white sugar for bura sugar, which brings a gentler sweetness. I use organic flour and real Belgian or couverture chocolate. You will notice the difference immediately in the finish. A ganache made with real couverture chocolate behaves differently than one made with compound chocolate, and my sponges have a crumb structure that reflects the quality of the butter and eggs I use. ### The reality of fresh baking Since I don't keep ready-made stock, every order is a fresh start. Whether it is a tea cake for your afternoon snack or a bundt cake for a weekend celebration, I begin the process only after you place your order. This means you might need to plan 24 hours ahead, but it also guarantees you won't be eating something that has been sitting in a refrigerator for days.
