Instead, we soak a mix of dried figs, apricots, cherries, and berries in fresh orange juice for days. This patient process softens the fruit and infuses the sponge with a deep, natural sweetness that makes every bite rich and decadent, proving that inclusive baking never means compromising on flavour. We believe that dietary preferences should never limit the joy of a celebration. That is why our kitchen approach remains consistent, whether we are baking a standard sponge or a specialized eggless or gluten-free treat. We refuse to rely on commercial pre-mixes, stabilizers, or margarine. Our sponges are made from scratch with high-quality flour and real unsalted butter, which ensures the crumb structure stays moist and flavourful. For those avoiding gluten, our ragi chocolate cake has become a firm favourite, surprising even those who usually prefer traditional wheat-based desserts with its dense, earthy richness. We pay the same attention to our finishing touches for these cakes, using premium whipping cream or signature cream cheese frostings. This ensures that your dietary-friendly cake looks and tastes just as impressive as any other on the table. Whether you are planning a birthday, an anniversary, or a festive gathering, we are here to ensure no one at your party feels like they are missing out on the dessert. ## About Lots Of Cake We bake because we love it, and we truly believe cake is for everyone. We put just as much care into our gluten-free and eggless bakes as we do our signature recipes, because we know how important it is to have a dessert that every guest at the party can actually enjoy.
