They are tempered Belgian couverture designed to snap with the same integrity as our signature truffles. We mould them by hand in small batches, ensuring the chocolate maintains a perfect temper even when shaped into intricate designs like handbags or heels. While our truffles and bars remain our staples, this collection represents the moments where our kitchen team pushes the boundaries of our craft. Take our marshmallows, for instance. Most commercial marshmallows rely on gelatin stabilizers and artificial flavourings to maintain their shelf life. Ours are different. We rely on time and the right aeration to achieve that signature bounce, resulting in a clean, soft texture that pairs perfectly with a hot chocolate dip. Similarly, our moulded chocolates, such as our high heels and handbags, are not simply novelty items. We apply the same rigorous tempering process to these as we do to our ganache squares. It is a slow, exacting process that requires careful monitoring of room temperature, especially here in Bengaluru, to ensure the chocolate sets with a glossy finish and a clean, satisfying snap. We prefer keeping these batches small. It allows us to maintain the purity of the Belgian couverture without the need for synthetic stabilizers that compromise the flavour profile.
