We slow-cook it overnight until it develops that creamy, dense texture you just cannot get with quick-fix methods. It is the same recipe my Papa started with 25 years ago, and we refuse to change a single step of the process. Beyond the dal, our kitchen revolves around the old-school charcoal tandoor. It is what gives our curries and kebabs that subtle, authentic smoky depth. When you order a Paneer Lababdar or our Mutton Rogan Josh, you are tasting masalas that are still ground by hand using the same secret blend we have protected for a century. We keep things simple. No fancy shortcuts, no compromise on the quality of our fresh paneer or vegetables. Whether you are grabbing a quick lunch thali or sitting down for a family dinner, the focus stays on the 'shudh desi ghee' and the honest, robust flavours of North India. My Papa opened Kund 25 years ago right here in Indiranagar, and our little family spot has stayed true to his dream ever since.
