For my brownies, I bake them in controlled, smaller batches to ensure the centers stay dense and fudgy rather than turning into cake. If you are planning an event, tell me early so I can manage the tempering and cooling process properly, especially with our Darjeeling weather. ### The Craft Behind The Chocolate Tempering chocolate is science, not magic. Whether it is a dark chocolate ganache or a fruit-based gel, I focus on getting that ultra-thin shell with a crisp snap. The glossy finish you see on my bonbons comes from painting each mold with colored cocoa butter before pouring in the couverture chocolate. ### Why Fudgy Brownies Matter I do not do cakey brownies. You will find dark chocolate chunks in mine, with that distinct crackly top that separates a good brownie from a standard one. Since I wrap them individually, they stay fresh longer, making them a reliable choice for corporate events or school celebrations where you need everything to look clean and professional. ### Delivery in Darjeeling I bake everything fresh at my place in Manbari Basti. While I love creating intricate desserts, please understand that my chocolate work is sensitive to temperature and humidity.
