We do not use commercial flat-tops or industrial mixers. Every single dough ball is hand-rolled and cooked on a heavy tawa in our home kitchen, ensuring that flaky, layered texture that you actually expect from a heritage recipe. ### A Taste of History, Delivered When we shifted from Old Delhi to Noida, the one thing we couldn't find was the real taste of home. We grew up watching our family roll bread in Parathe Wali Gali, and that experience defined what 'good food' means to us. It is not about speed or bulk preparation. It is about the rhythm of the kitchen and the quality of ingredients. ### The Kitchen Tales Process - **Hand-rolled Dough:** We use only premium whole wheat chakki atta. No preservatives, no refined flour mixtures, and absolutely no factory-made breads. - **Small Batch Cooking:** Because we cook from our home in Sector 48, we operate in small batches.
