I bake them slowly in small batches to achieve that signature dense, velvety consistency that only a real baked cheesecake has. Because I avoid eggs, I rely entirely on the quality of premium cream cheese and my own fresh fruit reductions—using real Alphonso aamras or house-made strawberry compote—to ensure every slice hits that perfect balance of tang and sweetness. Many people assume that 'eggless' means a light, jiggly mousse. My cheesecakes are different. They are proper, oven-baked desserts with a dense, creamy mouthfeel and a buttery, crisp biscuit crust that holds up perfectly under our toppings. Whether you choose the Caramel Seasalt with its roasted hazelnuts or the intense, spiced Biscoff, I put as much effort into the base as I do into the finish. I believe in seasonal flavours. When mangoes are in season, I use nothing but fresh Alphonso aamras because tinned pulp or artificial essences simply cannot replicate that depth of flavour. The same applies to my berry compotes, which are cooked down until they are just right. Everything is baked to order, so please give me a heads-up of at least 24 hours. You can pick these up from my Parel or Kandivali patisserie, or I can arrange delivery across the Mumbai Metropolitan Area.
