My cookies follow a similar rule—they are thick, generous with the mix-ins like toasted pecans or chunky chocolate, and kept moist so they feel like a proper, indulgent treat. If you’re picking a box, keep in mind these are all 100% eggless and baked in small batches, so the ingredients actually shine through without any artificial shortcuts. ### The JusBaked Brownie Philosophy My approach to brownies is simple: if it isn't fudgy, it isn't worth baking. You won't find dry, cakey squares here. Whether it's the classic Walnut Brownie that gives you that satisfying crunch against the soft chocolate, or my Nutella-drizzled bakes, the goal is always a rich, intense cocoa profile. I use quality ingredients—no jelly fillers or fake flavourings—because when you’re taking that one moment to eat a brownie, it should be the real deal. ### Big Cookies, Soft Centres Most store-bought cookies are thin and crisp, but I prefer the bakery-style 'big cookie' that feels like a dessert in itself. From my Apricot Pecan, which balances the sweetness of dried fruit with the earthiness of nuts, to the Chocolate Seasalt, these are designed to be soft in the middle. I also keep a few healthier, guilt-free options on the menu, like my Oats Jaggery Brownies, for when you want a treat but want to feel a bit lighter afterward. ### Why Eggless Matters Everything on this page, and everything in my kitchen, is 100% eggless. Finding a great eggless bake used to be a struggle, which is why I started JusBaked in the first place. Whether you’re ordering for a Parel office gathering or a quiet evening at home in Kandivali, you’re getting the same high-quality, vegetarian-friendly dessert. We bake to order, so please reach out a day in advance so I can ensure your box is fresh out of the oven. ## About JusBaked Hi, I’m Anjali. I started JusBaked because I love baking, and honestly, these recipes are just me trying to recreate the comforting flavours I enjoy. I’m picky about ingredients—no artificial stuff—so when you bite into one of my brownies, you’re getting exactly what I’d serve in my own home.
