Whether it is a gravity-defying theme or a multi-tier wedding cake, I use specific doweling and board reinforcement to make sure your design stays exactly as I planned it, from my kitchen in Hiranandani to your venue. Behind every clean line and smooth finish is a process of trial and error. My work starts long before the oven turns on, sketching out your theme and deciding on the structural integrity needed to support those fondant figurines or heavy toppers. Since everything I bake is 100% eggless, I have spent years perfecting a stable sponge that holds its shape without compromising on that soft, moist bite. I do not rush the cooling or the crumb-coating process because quality takes time. From creating my own colored sugar sprinkles to engineering stable cake boards, I am happy to share the methods that ensure your cake arrives at your celebration looking perfect. If you have a specific vision, I am happy to walk you through how we can make it happen within your budget and timeline. ## About Anju Khandelwal I live for the smell of flour in the morning and the satisfaction of a clean, sharp edge on a cake. When I am not baking for clients across Mumbai, I am usually obsessing over cake stability or mixing new buttercream recipes to get that perfect, soft bite.
