It is slow-cooked overnight with just enough butter and cream to achieve that perfect, velvety texture. This depth of flavour is something you cannot fake with high-heat cooking, and it is usually the first dish my clients request when we discuss their event menu. Beyond the dal, my kitchen is about re-creating classics. Take the Jodhpuri Kabuli, for instance—a fragrant Rajasthani rice dish layered with vegetables and nuts that looks as royal as it tastes. My approach to these comfort dishes is rooted in nostalgia. Whether it is a traditional Sajjan Goth Thali for a family function or simple, spicy Chole Kulche for an office lunch, the goal is always the same: food that feels like a warm hug. I use traditional methods, like slow-cooking in copper vessels, to ensure the authenticity of the flavour profile remains intact. I do not believe in standard, boring buffet spreads. We work closely with you to plan a menu that respects the heritage of these dishes while fitting the specific vibe of your celebration in Delhi NCR. From the first welcome drink to the final dessert, every dish is meant to bring people together, just like the meals we grew up eating. ## About Dhamaal Gully I am Manisha, and at Dhamaal Gully, my kitchen is all about that 'Kamaal ka Khaana' feeling. I believe vegetarian food should have as much heart as the celebration itself, so I pour my love for traditional recipes into every plate I serve.
