We start with 48-hour sous-vide infusions and house-aged shrubs, like our pomegranate shrub or ginger limoncello, to build flavours from the ground up. Whether you are ordering our signature Pickled Pom Whiskey or a milk-washed clarified cocktail, you are tasting ingredients crafted in-house specifically for that pour. At Comorin, the bar is our main stage. We do not believe in standard recipes. Our approach to mixology starts inside our lab, where we experiment with house-fermented shrubs, cordials, and custom infusions that define our menu. ### The Art of the Pour Every drink tells a story. Take our **Pickled Pom Whiskey**, where bourbon is infused with our proprietary pickling spice and balanced by a pomegranate shrub. Or the **Jamun Ale**, which uses a house-made jamun cordial and black salt to bring back memories of summer holidays. If you prefer something crisp, our **Cuban Sour** is on tap, designed to be perfectly consistent and refreshing every time you order it. ### Behind the Glass We invest heavily in the technical side of the drink. Our clarified cocktails use milk-washing techniques to achieve a silky mouthfeel and crystal-clear presentation, often using top-shelf spirits like Monkey 47. We use high-density clear ice blocks to ensure your drink stays chilled without diluting the flavour profile before you finish it. ### Craft Zero-Proof We bring the same precision to our alcohol-free options. These are built for adult palates, focusing on botanicals and house-fermented ginger ale rather than sugar.
