I know that chemical aftertaste you have probably experienced with other 'healthy' desserts, and this isn't that. The texture remains thick and luxurious—exactly how a proper Basque burnt cheesecake should be—without the sugar spike. ### The Basque Style, Reimagined I treat my Basque Burnt Cheesecakes with the respect they deserve. That dark, caramelized exterior isn't an accident; it is the result of high-heat baking that creates a deep, complex flavor profile to contrast the incredibly creamy center. When you take a bite, you are getting the full, indulgent experience without the refined sugar. ### Why Ingredients Matter I do not do 'shady' ingredients. Every cheesecake is made in-house using kitchen staples. Because I use 100% Erythritol, these are fully diabetic-friendly and keto-approved. Whether you are grabbing a single slice for yourself or a whole cake for a celebration, you know exactly what is going into it: real dairy, quality fats, and zero hidden sweeteners. ### Seasonal Toppings While the base is perfection, I love to play with what is in season. Depending on the time of year, I offer these topped with house-made 3-berry compote, fresh Alphonso mangoes, or strawberries and edible flowers. These are not just toppings; they are fresh additions meant to balance the richness of the cheese. ### How to Enjoy Since I do not use chemical preservatives, these bakes need a little love when they arrive. Keep them refrigerated and let them come to room temperature for ten minutes before eating to get that perfect, silky texture.
