It is a messy, slow process, but it is the only way to get that authentic, honey-sweet flavour without using carbide or other harsh chemicals. When the mango obsession hits, we really lean into it. Our Alphonso Mango Vanilla Gateau is the crowd-pleaser, featuring a classic vanilla sponge layered with house-made compote and fresh fruit. For those who want something richer, the Belgian Chocolate Alphonso Mango combination is a game-changer. The bitterness of dark chocolate ganache cuts through the sweetness of the fruit, making for a sophisticated bite. Don’t think you have to skip the season just because of dietary restrictions. We offer diabetic-friendly and keto versions of our mango specials, so nobody feels left out. Everything from our signature Basque Burnt Cheesecake to our cupcakes gets a seasonal upgrade. Since we are a small Bandra-based kitchen, these treats are limited to the mango season. We do not use canned pulp or artificial flavouring. It is strictly farm-fresh, seasonal produce. If you are planning a birthday or just want a summer treat, reach out early before the supply ends. ## About Chubby Baker & Co. I am the Chubby Baker, and mango season is my absolute favorite time to be in the kitchen. I grew up loving those messy, sticky mango summers, and I aim to put that exact feeling into every gateau and cupcake I bake.
