For my Black Forest and Cherryoclate cakes, I’m using actual, juicy Himachal cherries that I cook down into a compote myself. It makes the flavor so much punchier, and you'll definitely taste the difference between this and a standard bakery cake the second you take a bite. I'm not a fan of those plastic-tasting cherries that usually come on store-bought cakes. My 'Memory Lane' Black Forest is a nod to those classic Indian bakery cakes we all grew up with, but honestly, it’s just better. I’m talking dark chocolate shavings, proper whipped cream, and a compote made from the real deal. It’s nostalgic, sure, but it’s made with quality chocolate and fresh fruit. Then there’s my Cherryoclate cake—this is for the chocolate obsessives. It's a rich Belgian chocolate sponge soaked in fresh cherry juice, layered with my house-made compote, and finished with a ganache that is dangerously good. I finish them off with a literal bouquet of fresh cherries on top because, why not? If you want to see what sin looks like, this is it. Since I source everything based on what’s coming in fresh from the farms, these aren't always on the menu year-round. They are seasonal specials, so when you see them popping up, that’s your queue to grab one. I also do cherry-filled cupcakes if you need something smaller that still packs that same fruity punch.
