Whether it's strawberries from Mahabaleshwar or high-quality blueberries, we cook the compote ourselves so it keeps that perfect tart-sweet balance. It is why our cakes have that fresh, vibrant kick that you just won't find in a standard bakery jam. I believe that if you're paying for a fruit cake, you should actually taste the fruit. My process is simple but time-consuming. I take the best seasonal berries, simmer them down slowly with minimal sugar, and fold them into my Swiss Meringue buttercream. My 3-Berry Victoria is the star here for a reason. It uses a blend of strawberries, raspberries, and blueberries that creates a depth of flavour that changes slightly with the seasons. If you're a chocolate lover, don't miss my Belgian Chocolate Berry cake, where the richness of the chocolate sponge is cut perfectly by the sharp berry compote. For those of you with specific dietary needs, I've got your back. I offer keto, gluten-free, and sugar-free versions of these berry favourites. I use pure almond flour and natural sweeteners like erythritol instead of maltitol or other nasty fillers, so you get the same indulgence without the guilt. Everything is made fresh in my Bandra studio. Whether it’s a birthday, an anniversary, or just a Tuesday where you need a treat, these cakes are designed to be light, fresh, and real. If you have a specific fruit preference or a dietary constraint, just let me know. I love a bit of customization. ## About Chubby Baker & Co. I'm the Chubby Baker, and I take my fruit game very seriously. I'm obsessed with getting that perfect balance of fresh berries and buttery sponge. My goal is simple: to make sure you get a cake that tastes like real fruit, not sugar syrup.
