I handle the entire process, from sourcing the ripest seasonal mangoes to hand-finishing the mirror glaze, ensuring that every element—from the zesty chilli compote in the Mango Mambo to the smooth mascarpone in La Mangue Royale—maintains its intended texture. Because everything is made to order without preservatives, these boxes are best enjoyed on the day they arrive, so please plan your delivery accordingly. The challenge with mango is its high water content, which often leads to soggy desserts. To solve this, I build my mango entremets with a focus on structural integrity and contrasting textures. Each piece features a multi-layered construction: a stable sponge base, a crunchy feuilletine or dacquoise layer, an aerated mousse, and a liquid centre. This allows the mango to shine without compromising the pastry. My signature combinations explore the fruit beyond its natural sweetness. In the Mango Mambo, for instance, I pair mango mousse with a hint of passionfruit and a spark of chilli to cut through the richness. The Mango Blush balances the tropical fruit with the tartness of raspberry, layered over a white chocolate mousse and soft vanilla sponge. Each piece is finished with either a high-gloss mirror glaze or a matte cocoa butter velvet spray, ensuring the visual presentation matches the intensity of the flavour. These boxes are assembled fresh in Delhi-NCR, allowing for same-day delivery if you order before 4 PM.
