This isn't just for appearances. It is a structural approach that ensures every spoonful delivers a balanced contrast of texture and flavour, whether you choose a high-gloss mirror glaze or a matte velvet spray. We build our cakes to be remembered, not just to look good. That starts with a strict refusal to use compound chocolate. We only work with real couverture chocolate, which provides the depth and melt-in-the-mouth quality essential for a proper French mousse cake. When we plan a custom entremet, we start with your preferences. You might want something nutty, sharp, or deeply indulgent. We then assemble those flavours into our signature 5-layer composition.
