It is meant to be shared, but be warned: you might find yourself wanting the whole bowl. Starting a meal at Camillo's is about setting the right tone. I don't believe in boring salads or standard starters; I believe in dishes that make you sit up and take notice. Take my Stracciatella Bruschetta, for instance. It relies on the crunch of house-made sourdough, the creaminess of high-quality cheese, and the sweetness of candy tomatoes. It is simple, but it works because the ingredients are allowed to be the star. Then there is the Pineapple Tartare. It sounds unconventional, but the citrus-rubbed Doritos provide a texture that plays perfectly against the marinated tomatoes and a sharp citrus picante sauce. It is a dish designed to stir something deeper—a flash of brightness to kick off your dining experience in Friends Colony. If you prefer something heartier, my Roasted Tomato Soup comes with a parmesan and pesto crostini that feels like a warm blanket. For those who enjoy the drama of dining, my table-side preparation is a regular feature. Whether it's the finishing touches on a salad or the way we plate our bruschetta, I want the experience to feel personal and engaging.
