We pan-fry the egg-coated bread until the edges are golden and crisp, sealing in the spiced minced meat exactly as we have for decades. It is a late-night Mumbai ritual that we refuse to change because shortcuts are not in our dna. Our approach to bread is simple: it must be fresh and it must complement the meat. Whether you are at our original Colaba stall or our family-friendly Bandra outlet, the quality remains the same because we mix our masalas by hand in our central kitchen. The art of the Rumali Roti is a skill our chefs master over years, tossing the dough until it is thin enough to see through, then cooking it on the inverted tawa for that signature soft texture. For those visiting our Bandra outlet, we have something unique: the Cheese Roti. It is an indulgence, but one that our regulars swear by.
