Because the broth needs hours of simmering to reach that perfect, gelatinous consistency, I ask that you place your orders at least 24 hours in advance so I can prepare it fresh from scratch without any shortcuts. Cutchi Memon cuisine is defined by depth, patience, and spices that tell a story. When you order from my kitchen, you are getting food passed down through generations, not something whipped up in a commercial facility. My Mutton Paya (trotters curry) is the best example of this process. It requires consistent low heat to develop the rich, warming broth that pairs perfectly with a hot roti. It is a hearty dish that simply cannot be rushed. Then there is the snack side of my menu. My Memon Chivda is a nostalgic staple I grew up with. It is a precise balance of textures, combining fried coconut slices, peanuts, cashews, and a specific spice blend that hits just the right notes. Unlike mass-produced mixtures, I make this in small batches to ensure the ingredients stay fresh and the crunch remains perfect. Whether you are hosting a traditional gathering in Bengaluru or just craving a taste of home, these recipes are my way of sharing my heritage. I keep the process honest and simple: fresh ingredients, traditional spice profiles, and absolutely no artificial preservatives.
